Start your day with these delicious Chai Latte Macadamia Nut Waffles!
Ingredients
- 2 cups half & half
- 3 star anise pods
- 5 whole cloves
- 5 allspice
- 5 peppercorns
- 2 cinnamon sticks
- Cardamom, to taste
- 1 tsp fresh ground nutmeg
- 1 tsp fresh ground ginger
- 1/2 cup butter
- 1 tablespoon vanilla
- 2 cups flour
- 1 tablespoon baking powder
- 1/2 cup sugar
- 1/2 tsp salt
- 2 eggs
- 1 cup chopped macadamia nuts
Directions
- In a glass measuring cup in the microwave OR a sauce pan on the stove: simmer and steep 2 c. half & half with 3 anise pods, 5 cloves, 5 allspice, 5 peppercorns, 2 cinnamon sticks, cardamom, 1 tsp nutmeg, and 1 tsp ginger. Remove from heat and add 1/2 c. butter to the mixture to melt. Add 1 tbsp vanilla. Set aside.
- In a bowl, mix 2 c. flour, 1 tbsp baking powder, 1/2 c. sugar, and 1/2 tsp salt.
- Separate 2 eggs, whip the whites to a peak. Keep the yolks.
- Stir together the flour mixture, the half & half mixture, and the egg yolks.
- Fold in egg whites and 1 cup chopped macadamia nuts to complete the batter.
- Use the batter in a hot waffle iron according to the waffle iron instructions.
