Chocolate Chip Macadamia Oatmeal Bar

Ingredients

  • Butter and sugar for pan
  • 1/2 cup butter
  • 1/2 cup light brown sugar
  • 1/4 cup sugar 1 egg
  • 1 teaspoon vanilla
  • 3/4 cup flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • Pinch of salt
  • 1 and 1/2 cups whole rolled oats
  • 1/2 cup chocolate chips
  • 1/2 cup macadamia nuts

Directions

  1. Preheat over to 350.
  2. Butter and sugar a 9 x 9 pan.
  3. In a sauce pan at medium heat, brown 1/2 cup butter stirring 10-15 minutes. Let cool a few minutes.
  4. Whisk together 1/2 c. light brown sugar, 1/4 c. sugar, 1 egg, 1 tsp vanilla.
  5. In a separate bowl, mix 3/4 c. flour, 1/2 tsp baking soda, 1 tsp pumpkin spice, pinch of salt, and 1-1/2 c. whole rolled oats.
  6. Stir flour mixture and butter mixture together.
  7. Fold in 1/2 c. chocolate chips and 1/2 c. macadamia nuts.
  8. Pour into prepared pan and bake at 350 for 18 minutes.
  9. Cut and serve.
Store at room temperature.
